Avocado Toast With Egg, Tomato, Mozzarella & Basil

Meet your new favorite toast. Smashed avocado, fresh mozzarella, and a perfectly cooked egg come together for a creamy, protein-packed base, layered with ripe tomato and fragrant basil for a fresh, satisfying meal any time of day.

Smashed Avocado Toast With Egg, Tomato, Mozzarella & Basil

 Ingredients

  • 1 slice whole-grain bread, toasted
  • Cooking spray
  • 1 large (50g) egg
  • 1/3 avocado (50g), smashed
  • 2 oz. (56g) fresh mozzarella cheese, sliced
  • 2 slices tomato (65g)
  • 2–3 fresh basil leaves, chopped

Directions

Toast the bread. Coat a small pan with cooking spray and place over medium heat. Crack the egg into the pan and cook until the whites are set, about 2–3 minutes. Flip gently and cook for another 30 seconds, then remove from heat.

Spread the smashed avocado on the toast, then layer with mozzarella slices and tomato. Top with the egg and sprinkle with chopped basil.
