Who says side dishes can’t be the star of the show? This brown rice recipe combines the spice of jalapeño peppers and red chili powder with the freshness of ripe tomatoes to create a perfectly delicious side dish.

Tomato Rice

Ingredients

  • 1/2 cup (90g) uncooked brown rice
  • 1 tsp olive oil
  • 4 medium tomatoes, 2 finely chopped and 2 cut into large pieces
  • 1/2 tsp salt
  • 1 tsp red chili powder
  • 1 jalapeño pepper, de-seeded and finely diced
  • 1 tbsp lime juice

Directions

Cook the brown rice according to the package directions until tender but still firm. Drain any excess water and set the rice aside to cool.

Heat oil in a pan. Add the finely chopped tomatoes and cook for 4–5 minutes. Stir in the salt, red chili powder, and jalapeño pepper, and cook for 1–2 minutes.

Add the cooked rice, lime juice, and the large tomato pieces. Gently stir until everything is evenly combined and heated through. Divide among bowls and serve hot.
